Mixing Bowl

Even for those who do not like broccoli, broccoli au gratin dish is a savory dish perfect for family dinners. I'm not going for the cheese version, well we're going to do it the hard way - but do not worry, it's not so hard!
Here's how I do it for my family each year.
Ingredients:
3 packages frozen chopped broccoli (10 oz) - or 2 pounds fresh broccoli, chopped
1 1 / 2 cups Cheddar cheddar cheese
1 / 4 cup Parmesan cheese
4 cups milk
1 stick unsalted butter
1 tablespoon melted butter
1 / 3 cup white all-purpose flour
2 cloves fresh garlic
1 / 2 cup chopped onion
1 teaspoon salt
1 red / 2 teaspoon
1 cup finely crushed cracker crumbs Ritz
Extra virgin olive oil
1 cup medium
1 bowl small
1 large pan
Instructions:
Preheat oven to 375 degrees F.
Place cracker crumbs in a bowl Ritz small and set aside.
Remove 2 tablespoons of the stick of butter and fat from the large pot. Set aside.
Get a large pot, fill 3 / 4 full with water, add a little salt and boil. Add broccoli and cook until slightly tender. Should be about 5 minutes, but not much. You can also steam the broccoli or the use of frozen broccoli. Drain the broccoli in a colander, rinse immediately with cold water. Place the cooked broccoli in large bowl.
While bringing water to boil and cook the broccoli, heat the extra virgin olive oil in a skillet and saute lightly the onion, add garlic, a little later. A little onion salt and garlic as it cooks. Mixture should be done when there was a slight nutty aroma of garlic. Remove from heat and combine with broccoli in large bowl. Mix ingredients in bowl and pour into casserole dish.
When the sauce is that we must start with a roux, (which is the base we start with - butter and flour). Leave a medium saucepan and melt the remaining stick of butter over medium heat. Gradually add the flour in the kitchen and to beat until a light sand color (or "blonde"). This should take about 2 1 / 2 to 3 minutes. Add salt and pepper. Slowly add the milk by the bat, and continue cooking until it thickens and boils. This should be about 4-5 minutes. Then add the cheddar cheese and continue beating until cheese melts. Remove from heat and add Parmesan cheese. Pour sauce over broccoli.
Retrieving the Ritz cracker crumbs, and add 1 tablespoon butter melted. Mix well and spoon on top on the pot. Cook uncovered for 40 minutes or until browned.

Is there a rule about the mixture of lime and / or lemon juice in a bowl of metal? Does the food taste funny?
I was doing snail salad and could only find a large metal bowl. The recipie called lemon and fresh lemon. But I remembered hearing once that their food in turn, get a coffee or in bad taste. Please advise.
