There are plenty of ways to cook the quinoa, but for this article, I will share some of my favorite recipes delicious lunch. I grew up eating rice every day and when I found out about the quinoa and the many benefits it offers, most never went back to rice.
Shrimp and Quinoa is probably my favorite, fills me up very well and I love the combination of ingredients. It is also easy to Whip It Up, so making this recipe a lot. To do this, you need 1 cup quinoa, cooked, 1 ½ cups water, 2 tablespoons olive oil 1 onion, chopped, 1 red pepper, ½ cup sliced mushrooms 6 asparagus shoots fresh chopped 1 tablespoon chopped ginger, salt and pepper to taste, 1 pound medium shrimp peeled and cleaned 2 tablespoons lemon juice.
Cook the quinoa and then set aside. Fry the onion and bell pepper in olive oil, mix in mushrooms, asparagus and ginger, continue cooking until everything is tender. Season with salt and pepper, then add the shrimp. If the shrimp is converted into a C shape, then it means it's done. In a large bowl, combine the shrimp with quinoa and mix with parsley.
Another way to cook quinoa for lunch is to mix black beans with it. All you need is 2 ½ to 3 cups cooked quinoa, 1 teaspoon vegetable oil, chopped onion, minced garlic, a pinch of cumin, pinch of cayenne pepper, salt and pepper to taste, 2 cans of black beans and cilantro exhausted chopped.
Heat oil and © Sauta garlic and onion, mix quinoa and season with cumin, cayenne pepper, salt and pepper. Stir for about 5 minutes and put the rest of the ingredients.
