1. Choose very fresh eggs
I only use eggs that are less than 5 days old. I am fortunate that I have 22 chickens and know what day the eggs are set and the name of the goose that laid. If you have your own chickens then I suggest you make friends with your local free range eggs.
2. A word about luxury eggs
I Cream Legba hens that lay blue eggs very pretty, but never achieved poached one, even a "newly established in the last hour "of the egg. You put it in water and that only disintegrates. Someone told me that this is because the target protein is different from the eggs normal. So to keep these scrambled or boiled (not fried well for the same reason). The yolk of gold looks beautiful in blue shell if boiled.
3. Start with a small pot of boiling water
Add a good shot of distilled white vinegar in the boiling water. I have not measured a "bullet", but it is probably talking a glass of sherry.
4. With boiling water, the tip of the egg in water
Stir the water well in advance to target all woven together. If you want to get fancy you can beat the water with a balloon whisk the eggs will then shaped torpedoes!
5. Boil for exactly 3 minutes
Fish Out of the egg with a slotted spoon. Other slotted spoon into a wad of kitchen towel to absorb water.
6. Now my trick of the trade
Always before cooking poached eggs at the start of breakfast. As soon as I dive off the timer in ice water to cool quickly. So when is the time to help put them in boiling water for one minute to reheat. This reduces considerably stress levels because if they do go wrong you will have time to select them and not let the rest of the breakfast to go cold and hard.

jajaja, I had the same problem in my house, until one day all the spoons magically disappeared, and finish below the pillow (still dirty)! I have no idea what happened (wink wink), now wash the spoon, and save it where it belongs! (so did the clothes that day too!)
